Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 1 m.-sized apple
  • 400 ml vegetable stock
  • 2 bay leaves
  • 1 large carrot(s)
  • 200 g mushrooms, fresh
  • 1 tbsp tomato paste
  • 100 ml red wine
  • Oil for frying
  • salt and pepper
  • 1 tbsp flour

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Finely chop the onion, garlic, mushrooms, and carrot and fry in oil until lightly browned and roasted. Deglaze with red wine and then add the vegetable stock. Chop the apple and add it to the sauce along with the bay leaves and tomato paste. Mix the flour with a little water and add it to the boiling sauce to thicken. Simmer gently for a good half hour over medium heat. Remove the bay leaves from the sauce. Season with salt and pepper, then puree finely.
