Ingredients for 2 servings:

  • 45 g oat flakes
  • 200g tofu
  • 100 g smoked tofu
  • 40 g seitan flour
  • 10 g cornstarch
  • 10 g yeast flakes
  • 25 g tomato paste
  • 15 ml soy sauce
  • 75 ml soy milk (soy drink)
  • 1 ½ tsp spice mix for meat or gyros
  • ½ tsp smoked salt
  • 1 tsp paprika powder
  • ½ tsp pepper
  • ½ tsp marjoram
  • ½ tsp onion powder
  • ¼ tsp caraway seeds
  • ¼ tsp curry powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grind the oats into oat flour in a food processor. Squeeze out the tofu and cut into pieces. Combine the oat flour, tofu pieces, and the remaining ingredients in a mixing bowl and puree with a hand blender until smooth and homogenous. The mixture should have a consistency similar to meatloaf. If necessary, add cornstarch/seitan flour or soy milk. Pour the mixture into a silicone mold or a Kaiserkuchen pan lined with aluminum foil. Bake at 180 degrees Celsius (350 degrees Fahrenheit) on the middle rack for 45 to 60 minutes. Cover the pan with aluminum foil towards the end of the baking time if necessary to prevent the vegan meatloaf from overcooking.
