Ingredients for 4 servings:

  • 100 g waffles (rice cakes)
  • 1 onion(s)
  • 2 tomatoes
  • 2 tbsp tomato paste
  • salt and pepper
  • 100 ml vegetable oil
  • 200 ml vegetable stock

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

Dice the onion and tomatoes as small as possible. Break the rice cakes into small pieces and mix them with the previously diced tomatoes and onions. Then add the tomato paste, vegetable oil, and vegetable stock. If the desired consistency isn’t reached, add more vegetable oil or vegetable stock to taste. Mix everything thoroughly or mash further until the rice cakes are completely softened. Since rice cakes are relatively flavorless, season generously with salt and pepper. It’s best to refrigerate the “Mett” overnight so it can fully infuse and the rice cake flavor completely disappears.
