Ingredients for 2 servings:
- 370 g wheat flour type 405
- 500 ml almond milk (almond drink) or oat milk
- 2 tbsp sugar
- 2 tsp vanilla extract or 2 packets of vanilla sugar
- 1 pinch(s) cinnamon
- 2 tbsp applesauce
- 1 tbsp apple cider vinegar
- 2 tbsp baking powder
- margarine
- 3 passion fruit(s)
- ½ banana(s)

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

First, combine all the dry ingredients and pass them through a sieve twice to make the pancakes nice and fluffy. Then add the wet ingredients. Mix everything well with a whisk. For best results, cover and refrigerate overnight. Heat a pan with a little oil. Drop small portions of batter into the pan and fry until golden brown, then flip and finish cooking. Passion fruit and banana topping: Puree 3 passion fruits and pass them through a sieve. Add half a banana to the passion fruit juice and puree again.
