Vegan peanut and vegetable noodle soup

Ingredients for 1 servings:

  • 300 ml water
  • 1 tsp vegetable stock powder
  • 1 carrot(s)
  • 1 small leek
  • 1 spring onion(s)
  • 1 piece(s) celery
  • e.g. glass noodles or rice noodles
  • 1 tbsp peanut butter

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

easy and fast

Bring approximately 300 ml of water with the vegetable stock powder to a boil. Add the cleaned and finely chopped vegetables. After a short time, add the glass noodles and cook until the vegetables and noodles are tender. Add the peanut butter to the soup and stir.
