Vegan potato cheese

Ingredients for 1 servings:

  • 130 g cashew nuts
  • 130 ml water
  • 4 tbsp lemon juice, fresh
  • 1 tbsp apple cider vinegar, vegan
  • 3 large potatoes, preferably floury, cooked, possibly from the day before
  • ½ onion(s) or shallot
  • salt and pepper
  • Chives or spring onions, fresh

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For the sour cream mixture, grind the cashews and then combine them with water, lemon juice, vinegar, and 2 pinches of salt. Mash the potatoes. Peel and dice the onion. Add the sour cream mixture, onion, salt, and pepper to the potatoes and season to taste. Garnish with chives or spring onions. Delicious with bread, rolls, or raw vegetables.
