Vegan Rice Casimir
The perfect vegan rice casimir recipe with a picture and simple step-by-step instructions.
- 1 Cup (300ml) Basmati rice
- 200 g Tofu
- 1 Can Canned fruits
- 400 ml Soy cream
- 1 tbsp Flour or maizena
- Curry powder
- Salt pepper
- Olive oil
- Spices
- Cut the tofu into small cubes and fry them with spices, salt and pepper in olive oil until golden brown (as always, I use my “chicken and poultry” spice mix from Migros). Remove the tofu from the pan and set aside. (To make it crispy, we fry it now and only add it to the curry sauce at the end.)
- Wash the rice and add twice the amount of water to a pan and cook covered until all the water has been absorbed.
- Approx. Bring 100ml of the soy cream to the boil with the flour / Maizena, stirring constantly, so that the mixture becomes thick. Add the rest of the soy cream.
- Add the juice of the canned fruit and the canned fruit to the soy cream. Season with enough curry (approx. 3-4 tbsp), salt and pepper.
- Finally add the tofu cubes and cook for another 2-3 minutes.
