Ingredients for 2 servings:
- 250 g mushrooms, brown
- 150 g broccoli
- 100 g edamame, peeled
- 75 g soba noodles
- 8 tbsp vegetable broth
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tsp rice wine vinegar
- 2 tsp Sriracha sauce
- 1 tsp agave syrup
- 1 tsp ginger root

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
with spicy peanut sauce
Slice the mushrooms. Divide the broccoli into florets and steam them lightly. Thaw the peeled edamame if frozen. Mix the sauce ingredients until smooth. Heat a little oil in a pan and fry the mushrooms until the mushroom liquid has evaporated. Season lightly with salt and pepper. Add the broccoli and edamame and fry until the broccoli is browned around the edges and cooked through. While the vegetables are cooking, cook the soba noodles in boiling water for 4-5 minutes, drain, and rinse. Once the vegetables are tender, serve the noodles with the vegetables and sauce.
