Vegan: Spelled – Pumpkin – Side Dish

The perfect vegan: spelled – pumpkin – side dish recipe with a picture and simple step-by-step instructions.

  • 1 quarter Grated Hokkaido pumpkin
  • 1 Cup Spelled grains
  • 1 tsp My vegetable broth *
  • 2 Cup Water
  • Finely chopped parsley
  1. Make the water with the vegetable stock and bring to a boil.
  2. Then add the cup of (medium-sized) spelled grains and bring to a boil.
  3. In the meantime, grate the pumpkin on a grater.
  4. Let the spelled grains simmer for about 10 minutes, then add the grated pumpkin, stir everything and let stand for about 5 minutes.
  5. At the end the parsley comes in and if you like it rounded off with freshly ground pepper ….. it can be eaten.
  6. I made more of the vegan dumplings 🙂
