Vegan sweet potato and celery puree

Ingredients for 4 servings:

  • 1 large sweet potato(s)
  • 1 small celeriac
  • 4 lovage leaves
  • Salt
  • 1 tsp pumpkin seed oil
  • n. B. water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Finely chop the lovage leaves. Peel and chop the sweet potato and celery root. Boil the sweet potato, celery, and lovage leaves in a little water for about 10 minutes. The finer the chops, the faster the cooking time. Then puree with a hand blender. Add the pumpkin seed oil and stir well. Season with salt to taste.
