Vegan yellow chili

Ingredients for 4 servings:

  • 3 onions
  • 2 bell peppers, yellow
  • 2 tbsp oil
  • 400 g tomatoes, chopped (canned or fresh)
  • ½ liter vegetable broth
  • 1 can white beans (280 g)
  • 1 can of corn (285 g)
  • 1 tsp sambal oelek or other spicy paste
  • salt and pepper
  • Paprika powder, sweet
  • Cumin powder
  • Turmeric powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

with peppers, corn and white beans

Roughly dice the onions and slice the bell peppers. Fry them with the diced onions in hot oil. Add the tomatoes and vegetable stock and simmer for 15 minutes over medium heat. Add the sambal oelek, drained beans, and corn. Season with salt, pepper, paprika, cumin, and turmeric. Cook for another 10 minutes and season to taste. We like to serve this with couscous or rice as a side dish.
