Ingredients for 2 servings:
- 400 g turkey strips
- 200 ml coconut milk
- 1 stalk of fresh lemongrass, alternatively lime juice
- 1 lime(s)
- 1 pack of pickled pak choi (Asian shop)
- 1 pack of pickled bamboo shoots (Asian shop)
- 1 pack of black-eyed peas with chili and pepper, pickled (Asian shop)
- 200 g ramen noodles or udon noodles
- salt and pepper
- 1 tbsp oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Season the turkey strips with salt and pepper. Wash the lemongrass, remove the top and bottom ends, and halve the stalks lengthwise. Cut the lime into eighths. Heat oil in a pan and sear the turkey on all sides. Add the lemongrass and cook for about 1 minute. Add the lime eighths, pak choi, bamboo shoots, and black-eyed peas, and top with coconut milk. Bring to a boil and simmer on low heat for about 7-8 minutes. Remove the lemongrass. Prepare the noodles according to the package instructions. Season with salt, pepper, and lime juice, if desired, and serve.
