Vegetable and beef meatballs

Ingredients for 4 servings:

  • 400 g minced beef
  • 1 small zucchini
  • 1 half bell pepper(s), red
  • 1 stalk(s) celeriac
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 egg(s)
  • 1 roll or breadcrumbs
  • 1 carrot(s)
  • salt and pepper
  • Paprika powder
  • cumin
  • 1 tsp mustard
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and chop the vegetables. Using a blender or chopper, chop them into small pieces. Transfer them to a bowl and add the minced meat. Combine all ingredients. Soak the bread roll, squeeze out any excess liquid, or add the breadcrumbs. Mix everything together and season to taste with the spices. Form the meatballs and fry them in a pan with a little oil on both sides. This simple dish is also suitable for children who don’t like vegetables and for women who like more vegetables on their plates. Note: I served it with rösti (fried potatoes) and mixed vegetables with a herb sauce.
