Vegetable casserole with Romadur soft cheese

Ingredients for 3 servings:

  • 300 g cauliflower
  • 300 g broccoli
  • Salt
  • 4 tomatoes
  • 100 g cheese (Romadur soft cheese, 20% fat)
  • 2 eggs
  • 5 tbsp coffee cream (10%)
  • chili powder
  • 1 tsp oil (olive oil), for the mold
  • nutmeg
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the cabbage and divide it into small florets. Boil salted water, add the cauliflower (cook for 5 minutes), add the broccoli, and cook for another 3 minutes. Drain the vegetables. Blanch the tomatoes, peel, and deseed them. Quarter the tomatoes. Finely dice the cheese with the rind. Mix the milk, coffee cream, eggs, and cheese together and season to taste. Place the vegetables in an ovenproof casserole dish and baste with the egg mixture. Bake in the preheated oven for about 15 minutes. Electric oven: 200°C, fan oven: 150°C
