Vegetable fried potatoes

Ingredients for 4 servings:

  • 700 g jacket potatoes from the previous day
  • 1 bell pepper(s), red
  • 3 spring onions
  • 250 g mushrooms, fresh, preferably brown
  • 1 apple
  • 100 g bacon cubes
  • 3 tbsp clarified butter
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean and dice the bell peppers. Cut the spring onions into rings, and the potatoes and mushrooms into slices. Core the apple and cut it into small pieces (unpeeled). Fry the bell peppers in 1 tablespoon of clarified butter over medium heat for 4-5 minutes. Add the onions and mushrooms and fry. Add the apple and sauté for another 2-3 minutes. Remove everything from the pan and keep warm. Fry the potatoes and bacon cubes in the remaining clarified butter over high heat until golden brown. Add the vegetables. Fry everything together for about another minute and season with salt and pepper. Serve with chicken or turkey schnitzel.
