Ingredients for 2 servings:
- 5 eggs
- 3 tomatoes
- 2 large mushrooms
- 1 bell pepper(s), red or yellow
- 20 g Parmesan
- basil
- chives
- olive oil
- salt and pepper
- Paprika powder
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Dice the mushrooms and bell peppers. Heat olive oil in a pan and fry the cubes for about 6 minutes. Meanwhile, blanch the tomatoes in hot water, peel off the skins, roughly dice, and add to the pan. Mix the eggs with Parmesan cheese and herbs, pour over the vegetables, and season. Let set and turn over with the help of a plate after about 5-6 minutes. The frittata can be served warm or cold. Serve with a salad.
