Vegetable fritters with chia seeds

Ingredients for 2 servings:

  • 6 carrots
  • 2 shallots
  • 1 zucchini
  • 2 eggs
  • 2 tbsp flour
  • Spice mix (paprika-pepper spice mix)
  • ½ tsp salt
  • 2 tbsp, sautéed chia seeds

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

quick and vegetarian

Grate the carrots, zucchini, and shallots. Add the eggs, spices, chia seeds, and salt and mix thoroughly. Stir in the flour and form the mixture into small patties. Fry the patties in a little oil in a pan over medium heat for about 2-3 minutes per side. I always make the patties about the size of a glass and very flat so they cook well. If desired, you can serve them with quark.
