Vegetable, minced meat and pasta pot

Ingredients for 4 servings:

  • 250 g pasta (wholemeal)
  • 200 g minced beef
  • 1 zucchini
  • 200 g mushrooms
  • 3 pointed peppers, red
  • 1 bunch of spring onions
  • 1 small can of corn
  • 2 cans of tomatoes, chopped
  • 1 tbsp tomato paste
  • 1 tsp vegetable broth, instant
  • 2 tsp vegetable oil
  • herbs, Italian
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Simple, low-calorie and delicious

Cook the pasta according to the package instructions. Slice the zucchini, dice the bell peppers and mushrooms, and ring the spring onions. Brown the ground beef in a deep pan or saucepan. Then add the finely chopped vegetables and continue to cook for about ten minutes. Add the tomatoes and sweetcorn. Season well with tomato paste, vegetable stock powder, pepper, and Italian herbs and simmer on medium heat for about five to eight minutes (depending on consistency). Stir occasionally. Finally, add the pasta to the vegetable, mince, and tomato sauce and simmer for two minutes. This meal reheats wonderfully and tastes just as good the next day. One serving has 10 ProPoints.
