Ingredients for 4 servings:

  • 2 zucchinis
  • 500 g tomatoes
  • 3 carrots
  • 1 bunch of parsley
  • 1 handful of basil leaves
  • 1 onion(s)
  • 1 tube(s) Tomato paste
  • 1 garlic clove(s)
  • 1 can of corn
  • 1 pinch(s) of salt and pepper
  • lovage
  • some oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

First, wash the vegetables and peel if necessary. Cut the vegetables into bite-sized pieces. Heat a pan on the stove with a dollop of oil. Add all of the tomato paste and fry. The carrots take the longest and should go into the pan first, followed by the onions and the rest of the vegetables. Deglaze with enough water (don’t forget to stir) until a sauce forms. Season with salt, pepper, and lovage. Finally, add the parsley and basil. Simmer on low heat until it is cooked to your liking. We like it a little crunchy. Rice is delicious with it, but we also like to eat it just as it is. Tip: You can, of course, change the vegetables to suit your taste.
