Vegetable pancakes with quark

Ingredients for 3 servings:

  • 200 g potatoes
  • 1 onion(s)
  • 100 g celery
  • 125 g carrot(s)
  • 1 tbsp oat flakes
  • 2 tbsp spelt flour or wheat flour
  • 1 egg(s)
  • salt and pepper
  • Oil for frying
  • 250 g quark
  • salt and pepper
  • Paprika powder
  • 1 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix the quark with 1 tablespoon of olive oil and season with salt, pepper, and paprika to taste. For the vegetable fritters, peel the vegetables and then chop them into large pieces. Place everything in the Extrachef with the cutting attachment. Add the egg, oatmeal, and seasonings and chop everything finely. Transfer the vegetable mixture to a bowl, add 2-3 tablespoons of flour, and mix. Heat a little oil in a pan. Add a tablespoon of batter to the pan, flatten slightly, and fry in batches until crispy.
