Briefly boil the bulgur with the vegetable stock (300ml) for 2-3 minutes, then remove from the heat and let it swell for about 15 minutes. Meanwhile, dice the vegetables (including 1/2 onion), mince the garlic, and sauté in a pan for about 5 minutes. Now stir into the bulgur. Add the flour, breadcrumbs, and eggs and knead into a dough. Form patties and fry briefly in a pan with oil. For the sausage, slice the sausage. Fry together with the water (400ml), the gravy, half an onion, and the roux and simmer briefly. Serve both hot.
