Ingredients for 1 servings:
- 2 stalk(s) leeks
- 2 thick carrots
- 1 large bell pepper(s)
- 1 sweet potato(s)
- 1 garlic clove(s)
- 3 eggs
- 2 tbsp, heaped flour
- some milk, about 1 small cup
- salt and pepper
- Spice mix for scrambled eggs
- 50 g leaf spinach, frozen, thawed
- some olive oil
- n. B. cheese, grated
- possibly grease for the tray
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Clean the vegetables, chop the leek and bell pepper into small pieces, and coarsely grate the carrots and sweet potato. Whisk the eggs with the milk, crush the garlic clove, add the spices, and mix everything with the flour. Squeeze out the thawed spinach, chop it finely, and add it to the mixture. Mix everything together with a little olive oil and place it on a baking sheet lined with parchment paper or greased. Place the vegetable pizza in a preheated oven at 180°C (top/bottom heat) for 30 minutes. After 30 minutes, sprinkle with cheese and bake for another 10 minutes. I serve it with 10% natural yogurt and pickled beets.
