Vegetable salad in a jar

Ingredients for 20 servings:

  • 500 g onion(s)
  • 1 kg carrot(s)
  • 3 kg tomatoes
  • 500 g bell pepper(s), color as desired
  • 500 g eggplant(s)
  • 250 ml olive oil
  • 2 tbsp sugar
  • Salt and pepper, black

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

The Russian name is Ikra

Clean and dice the vegetables, and sauté them separately. Then add everything to a large pot and simmer over low heat for 90 minutes. Finally, season with salt, pepper, and sugar. While still hot, pour into jars and seal immediately. This salad will keep for several months if stored in a cool, dark place. The salad is delicious with stir-fries or simply on its own on a slice of fresh white bread. I like it best chilled; it tastes like summer in a jar.
