Ingredients for 1 servings:

  • 1 zucchini
  • 1 paprika powder, yellow or red
  • 1 handful of cherry tomatoes
  • 1 spring onion(s)
  • 150g tofu
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 garlic clove(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Clean and wash the vegetables. Cut the zucchini, peppers, tomatoes, spring onions, and tofu into equal-sized pieces/cubes and thread them alternately onto wooden skewers. In a bowl, mix the olive oil and soy sauce with a small spoonful of honey. Press in a clove of garlic and stir again. Brush the skewers with the marinade using a pastry brush until the vegetables are shiny. Place the skewers on a baking sheet lined with parchment paper and bake in the oven at around 180°C (350°F) until they are beautifully browned. Serve with flatbread. This would also be great during barbecue season, using aluminum foil as a base.
