Vegetable Soup with Organic Chicken
The perfect vegetable soup with organic chicken recipe with a picture and simple step-by-step instructions.
- 1 bunch Soup greens; Celery, carrots, leeks, parsley root
- 1 Large onion
- 2 Chicken drumsticks or chicken breast as desired
- 1000 ml Water
- Some rapeseed oil, 1/2 teaspoon salt, a pinch of nutmeg, pepper and a touch of chili powder
- Soup noodles if desired
- Wash the vegetables, chop them up, cut the leek into strips.
- Peel and halve the onion. Fry the cut surfaces in a saucepan with a little oil until the surfaces are golden brown. Put aside.
- Wash the chicken, do not place on wooden boards. Put the meat on top with the cold water in a second saucepan, cook with the onion halves for 15 minutes, then add the cut vegetables to the saucepan as well.
- Cook until the meat is cooked through for about 30 minutes, then season with nutmeg, pepper and a little chilli, also season with salt. Remove the meat, peel it and cut into small pieces. Then put it back in the broth. If you want, you can also cook soup noodles at the same time
