Vegetable Soup with Pak Choi
The perfect vegetable soup with pak choi recipe with a picture and simple step-by-step instructions.
- 1 bunch Soup greens
- 1 Onion
- 30 g Ginger
- 1 tbsp Lemongrass paste
- 2 tbsp Sesame oil
- 2 piece Cloves
- 2 tbsp Soy sauce
- 100 g Mie noodles
- 250 g Pak Choi mustard cabbage
- 150 g Sprouts
- 2 liter Vegetable broth
- Salt and pepper
- 0,5 bunch Fresh coriander
- Soup greens: Peel the carrots, cut into slices and quarter, peel the celery into pieces and cut into small cubes. Peel the onion and cut into small cubes. Peel and finely chop the ginger.
- Heat the oil in a large saucepan and fry the prepared vegetables in it. Add the lemongrass paste and fry briefly. Pour in the vegetable stock. Add cloves, salt and pepper. Simmer the soup for about 30 minutes. Remove the cloves from the soup. Add soy sauce.
- Prepare Mie noodles according to the package instructions. Clean and wash the pak choi, remove the stalk. Cut the white of the pak choi and the leaves into strips. Pour into the soup and let it steep for approx. 5 minutes. Drain the pasta and add to the soup with the sprouts.
- Pluck the coriander leaves from the stalks. Arrange the vegetable soup with pak choi on plates and sprinkle with coriander leaves for serving.
