Ingredients for 2 servings:

  • 1 bunch of soup vegetables
  • 1 m.-sized onion(s)
  • 1 m.-sized potato(s)
  • 500 ml vegetable stock
  • 200 g green spelt
  • salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

vegetarian

Peel the potatoes, then cut into small cubes. Trim the vegetables, cut into bite-sized pieces, and place them in a bowl. Peel the onion, then dice it, and sauté it in the pot until translucent. Then add the vegetables. Pour the vegetable stock over the vegetables and add the potatoes. Simmer for about 10 minutes, then add the green spelt and let the stew simmer until the potatoes are tender. For non-vegetarians, I add soup meat or meat of your choice and let it simmer with the vegetables first. Finally, season with salt and pepper to taste.
