Vegetable stew 'Jumbo' Gaisburger style

Ingredients for 6 servings:

  • 1 ½ kg beef (e.g. boiled beef)
  • some marrow bones
  • 200 g beans, green
  • 200 g Brussels sprouts
  • 200 g carrot(s)
  • 200 g cauliflower
  • 200 g peas
  • 3 Cabanossi
  • 300 g potatoes
  • 250 g spaetzle
  • 100 g bacon
  • 1 large onion(s)
  • 4 liters of vegetable broth
  • 3 bay leaves
  • some juniper berries
  • 2 carnations
  • salt and pepper
  • oregano
  • Paprika powder
  • butter

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

the North German variant

First, finely dice the bacon and onions and fry in butter until translucent. Then add the meat, brown on all sides, and deglaze with the broth. Add the bay leaves, juniper berries, and cloves, and simmer with the bones for at least 2 hours. Skim off any foam if necessary. When the meat is tender, remove it from the broth with the bones and set aside. The dog likes the bones, if you have one. Remove the bay leaves and juniper berries from the broth. Add the finely diced potatoes to the broth and bring to a boil. When the potatoes are half cooked, add the spaetzle and vegetables, and continue cooking until everything is tender. Dice the meat and return it to the stew. Slice the Cabanossi and add it as well. Bring everything back to a boil and season to taste.
