Ingredients for 4 servings:

  • 250 g flour
  • 6 eggs
  • 2 tbsp butter
  • 600 g mixed vegetables, e.g. beans, carrots, peas
  • 250 g sour cream
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

For the batter, separate 4 eggs. Reserve the egg whites. Blend the egg yolks with flour and butter to form a smooth batter. Season with salt, if desired. Preheat the oven to 220°C. Clean and finely chop the vegetables, then blanch them. Line a tart dish with the batter and bake in the oven (without any topping) for 5 minutes. Let the batter cool and then add the vegetables. For the topping, beat the sour cream with 2 eggs and the remaining 4 egg whites. Season to taste with spices. Pour onto the tart and bake at 180°C for 15-20 minutes.
