Ingredients for 4 servings:

  • 400 g mixed vegetables (frozen)
  • Salt
  • 2 m.-sized potatoes, boiled
  • 4 eggs
  • 250 ml milk, low-fat
  • ½ tsp marjoram
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the frozen vegetables in boiling salted water according to the package instructions. Peel the potatoes and dice them finely. Stir-fry the diced vegetables and potatoes in a non-stick, ovenproof pan. Whisk the eggs with the milk and marjoram and season with salt and pepper. Pour the egg wash over the vegetables and let it set briefly. Bake in a preheated oven at 180°C on the middle rack for about 10-15 minutes. Serve hot.
