Ingredients for 4 servings:

  • 250 g rice
  • 100 g carrot(s)
  • 2 onions
  • 1 bunch of parsley
  • 3 eggs
  • 50 g flour (whole wheat)
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Add rice to 625 ml boiling salted water, cover, and cook over low heat for about 30 minutes, until the rice has absorbed the liquid. Let cool. Peel and grate the carrots. Peel the onions and chop them along with the parsley. Beat the eggs and mix with the carrots, onions, and parsley. Add the flour and season with salt and pepper. Mix into the cooled rice. Fry a tablespoon at a time in hot oil until golden brown on both sides. Serve hot.
