Vegetables with Mascarpone Sauce
The perfect vegetables with mascarpone sauce recipe with a picture and simple step-by-step instructions.
- 1 medium sized Zucchini
- 2 size Sweet red peppers fresh
- 2 piece Fresh onion
- 1 tbsp Vegetable broth
- 1 teaspoon Herbs of Provence
- 2 piece Garlic cloves
- 1 Teaspoon (level) Salt and pepper
- 3 size Carrots
- 2 tablespoon Tomato paste concentrated three times
- 1 cups Mascarpone
- Clean and dice the vegetables. Peel and chop the onions.
- In a pan with a little oil, sauté the vegetables.
- It should still be firm to the bite.
- Then deglaze with the vegetable stock. So use the spoonful of granulated stock, then pour water on top.
- Then stir in some tomato paste and bring to the boil briefly, then stir in the mascarpone and season to taste with the spices.
- You can do anything for this. For us it was pork tenderloin.
