Vegetables with Mascarpone Sauce

The perfect vegetables with mascarpone sauce recipe with a picture and simple step-by-step instructions.

  • 1 medium sized Zucchini
  • 2 size Sweet red peppers fresh
  • 2 piece Fresh onion
  • 1 tbsp Vegetable broth
  • 1 teaspoon Herbs of Provence
  • 2 piece Garlic cloves
  • 1 Teaspoon (level) Salt and pepper
  • 3 size Carrots
  • 2 tablespoon Tomato paste concentrated three times
  • 1 cups Mascarpone
  1. Clean and dice the vegetables. Peel and chop the onions.
  2. In a pan with a little oil, sauté the vegetables.
  3. It should still be firm to the bite.
  4. Then deglaze with the vegetable stock. So use the spoonful of granulated stock, then pour water on top.
  5. Then stir in some tomato paste and bring to the boil briefly, then stir in the mascarpone and season to taste with the spices.
  6. You can do anything for this. For us it was pork tenderloin.
