Vegetarian broccoli patties with tomato sauce

Ingredients for 2 servings:

  • 1 head of broccoli
  • 1 bell pepper(s), red or yellow
  • 1 clove(s) garlic
  • 1 handful of cheese, grated
  • 1 cup quinoa
  • some salt and pepper
  • Spice(s), as desired
  • 3 m.-large tomato(s)
  • 2 tbsp, heaped tomato paste
  • 1 large egg(s)

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

First, clean and wash the broccoli and cook it in a large pot until al dente. At the same time, cook the quinoa. Cook the quinoa like rice. Add two cups of water to one cup of quinoa. When the water is almost gone, turn off the heat and let the quinoa simmer with the lid closed. Set the oven to 180 degrees Celsius (350 degrees Fahrenheit). In the meantime, chop the garlic and bell pepper and put everything in a bowl with the cheese. Chop the broccoli, but not too finely, and add it to the bowl. Add the egg and quinoa and mix everything well. Season to taste. Now form small patties. Carefully fry them on each side for 2 minutes, then place them in a baking dish lined with baking paper and place in the oven for 15-20 minutes. The patties can also be put in the oven without frying. Quickly chop the tomatoes and place them in a hot pan. Fry briefly, add a small cup of water and the tomato paste, season and let simmer a little longer.
