Vegetarian Burger with Baked Potatoes

The perfect vegetarian burger with baked potatoes recipe with a picture and simple step-by-step instructions.

For the patties

  • 6 size Potatoes mainly waxy
  • 2 Carrots
  • 1 size Onion
  • 50 g Peas
  • 50 g Cauliflower fresh
  • 2 Eggs, raw
  • 3 tablespoon Potato flour
  • Sweet paprika
  • Pepper
  • Salt

For the baked potatoes

  • 3 size Potatoes mainly waxy
  • Oil
  • Chopped rosemary

For the burgers

  • 2 size Onion
  • 1 pack Lamb’S lettuce
  • 3 Tomatoes
  • 6 Discs Cheese
  • 6 Hamburger buns
  • Ketchup
  • Mustard
  • Soy sauce
  • Vegetable broth

For the patties

  1. Peel and cook the potatoes. In the meantime, peel and grate the carrots and cut the cauliflower into small pieces. Place in a bowl with the peas. Chop the onion and fry briefly. Now grate the boiled potatoes (they shouldn’t be quite through yet) in a separate bowl and mix in the onions. Mix with the other ingredients. Then add the eeri and potato flour to the mixture and season with the spices. The mixture shouldn’t be overly damp. If necessary add potato flour. Now shape the patties in a pan and fry them brown on both sides.

For the baked potatoes

  1. Peel and dice the potatoes (but not too small) and cook. Then spread on a baking tray lined with baking paper and brush with oil, salt and rosemary. Bake at 150 ° C for about 20 to 30 minutes. Mix together once in between so that the baked potatoes turn brown on all sides. It is best to put the potatoes in the oven while the patties are being seared in the pan.

For the burgers

  1. Bake the burgers in the oven for 2-3 minutes until brown. Wash the lettuce and cut the tomatoes into slices. Cut the onions into thick rings (about half a centimeter) and place in a pan. Briefly fry the sauce with two tablespoons. Now add a teaspoon of vegetable stock and 50ml of water. Simmer for 5 minutes and then pour off the remaining liquid if necessary. Halve the burgers. Brush one half with mustard, the other half with ketchup. Spread the patties on top and top with the cheese, lettuce, tomatoes and fried onions. Serve with the baked potatoes. Good Appetite!
