Vegetarian fried noodles

Ingredients for 1 servings:

  • 1 serving of wok noodles
  • 1 egg(s)
  • 2 cm ginger
  • 1 garlic clove(s)
  • 1 chili pepper(s), optional
  • 2 carrots
  • ½ onion(s)
  • some broccoli
  • 50 ml water
  • 4 mushrooms
  • Oil for frying
  • 1 tbsp soy sauce, to taste
  • salt and pepper
  • sesame oil
  • ½ lemon(s), juice
  • spring onion(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Pour boiling water over the noodles in a bowl and let them soak for 10 minutes. Whisk the egg. Grate the ginger. Crush the garlic. For more spice, finely chop a chili pepper. Finely slice the carrots. Quarter the onion. Slice the broccoli. Slice the mushrooms. Halve the lemon. Slice the spring onion into small rings. Now add oil to a hot pan or wok. Add the egg, ginger, garlic, and chili pepper and let everything fry for a moment. Add the carrots, onion, and broccoli and fry. Then add the water. Cover the pan. Once the water has completely evaporated, add the mushrooms. Then add the noodles. Deglaze everything with salt, pepper, and soy sauce and stir well. Add a few drops of sesame oil and fry everything lightly. Serve the dish on a plate and garnish with a few drops of lemon and spring onion.
