Vegetarian gyro salad with kritharaki noodles

Ingredients for 4 servings:

  • 200 g Kritharaki (rice-shaped noodles)
  • ½ cucumber(s)
  • 200 g cocktail tomatoes
  • 150 g feta cheese
  • 180 g soy slices (like gyros)
  • 1 onion(s)
  • 1 cup of yogurt
  • ½ cup of crème fraîche or sour cream
  • 1 garlic clove(s), squeezed
  • 1 tsp honey
  • olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Cook the pasta according to the package instructions and let cool. Fry the soy gyro in oil until crispy, then add the sliced ​​onion towards the end and fry briefly. Let cool. Make the dressing with the yogurt, crème fraîche, honey, crushed garlic, salt, and pepper. Stir in a dash of olive oil. Quarter the cucumber, remove the seeds, and cut into small pieces. Quarter the tomatoes as well. Crumble the feta cheese and add everything to the dressing. Finally, fold in the cooled pasta and soy gyro. Season to taste and let stand a little.
