Vegetarian gyros with tzatziki

Ingredients for 2 servings:

  • 500 g yogurt (if vegan, then use soy yogurt)
  • 200 g sour cream (if vegan, then use soy cream)
  • 1 cucumber(s)
  • 4 garlic cloves
  • 150 g soy shreds, large
  • e.g. water, boiling
  • 70 ml soy sauce
  • 4 tbsp vegetable stock powder
  • 3 m.-sized onion(s)
  • salt and pepper
  • Paprika powder, hot
  • olive oil
  • oregano
  • Thyme

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

vegan option also available

For the tzatziki, grate the cucumber as finely as possible and drain off any excess water. Mix with the yogurt and sour cream, press the 4 garlic cloves, and add them. Stir everything together and season with salt and pepper to taste. For optimal flavor, let it sit in the refrigerator for a few hours. For the gyros, place the soy strips in a bowl and pour boiling water over them and add 4 tablespoons of vegetable stock. Stir and let them soak for about 10 minutes. Drain the soy strips and squeeze out as much water as possible. Then fry them in olive oil until crispy. When the soy strips are well browned, add the soy sauce. Reduce the heat to medium, add the onions, and fry until crispy. Add the spices and herbs to taste and season to taste. Serve best with rice and salad.
