Vegetarian ham, skewers, and mortadella salad

Ingredients for 1 servings:

  • 170 g Greek yogurt, 10%
  • 2 packs of sausage substitute (vegetarian ham and mortadella), 80 g each
  • 2 tbsp mayonnaise, more if desired
  • 1 tbsp olive oil
  • 10 cm cucumber(s)
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

a light salad that is in no way inferior to a meat salad

Pour the yogurt into a bowl and whisk in the olive oil. Mix in the mayonnaise, salt, and pepper. Halve the mortadella slices, cut into thin strips, and add to the yogurt mixture. Peel and quarter the cucumber, if desired, and remove the seeds (otherwise it will be too watery). Cut into thin pieces, mix everything well, and season to taste. A light vegetarian “meat salad” that even meat-eaters will enjoy. You won’t really notice the difference.
