Ingredients for 2 servings:

  • 1 can of corn
  • ½ red pepper(s), cut into strips
  • 1 onion(s) in rings
  • 1 small can of peach(s) in wedges
  • e.g. cheese, leftovers
  • e.g. salt and pepper
  • oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Utilization of raclette leftovers

Sauté the onion and bell pepper in a little oil. Add the peaches and corn, along with any other leftover fruit and vegetables, and heat through. Season with salt and pepper. Once the ingredients are hot, reduce the heat and add the cheese to the mixture. Cover the pan and wait until the cheese has melted. We really like the savory-sweet combination, but it’s probably a matter of taste.
