Crispy tofu with zucchini

Ingredients for 1 servings:

  • 1 small zucchini
  • 1 pack of tofu
  • 2 tbsp soy sauce
  • 2 pinches of salt
  • 1 pinch(s) paprika powder
  • 1 pinch(s) of pepper
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 1 tbsp oil
  • e.g. tomato paste
  • e.g. feta cheese

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Place the tofu on kitchen paper, wrap it up, and place a weight on top. Once it has reduced in volume by about 20%, cut the tofu into medium-sized cubes. Also finely chop the zucchini, onion, and garlic. Fry the zucchini together with the onion, garlic, and oil in a pan. In the meantime, stir together the soy sauce and seasoning in a bowl or deep plate and add the tofu. After about three minutes, the zucchini should be cooked through. Now add the tofu and the remaining soy sauce to the zucchini in the pan and fry for 1-2 minutes. Add a little tomato paste and feta cheese, if desired.
