  1. Peel and dice the onion and ginger. Sauté both ingredients in a pan with oil.
  2. Wash the peppers and carrot, dice the vegetables as well and add them to the pot. Sauté it briefly and then add the curry powder.
  3. Once you have steamed and mixed the ingredients, pour in the coconut milk and broth. Then bring the soup to a boil.
  4. Then wash the red lentils and add them to the soup. Reduce the heat and let the soup and lentils simmer for about 15 to 20 minutes.
  5. When the lentils are done, puree everything with a hand blender. If the soup is too thick for you, simply add a little more vegetable broth.
  6. Finally, season the soup with salt and pepper and taste everything with lime juice.

Tomato lentil soup is delicious and quick to prepare. To prepare the vegetarian dish you need the following ingredients: 150 g potatoes, 1 clove of garlic, 1 onion, 1 tin of diced tomatoes, 300 g red lentils, 300 ml vegetable stock as well as salt, pepper, and several sprigs of parsley for seasoning. If you like it spicy, you need a shot of Tabasco.

  1. Peel the garlic, onion, and potatoes and cut them into small cubes. Then put everything in a pan with oil.
  2. Sauté the ingredients for a few minutes. Then add the washed red lentils.
  3. Then add the diced tomatoes and the vegetable broth to the vegetables. Season with salt and pepper and reduce the heat.
  4. Let the soup simmer for about 15 to 20 minutes. If you like the soup thick instead of chunky, simply puree it.
  5. Finally, chop the parsley and garnish the soup with it. If necessary, you can add a dash of Tabasco to the soup.

If you like something a little more unusual and spicier, try this recipe, which requires the following ingredients: 1 onion, 2 garlic cloves, 200 g red lentils, 1 eggplant, 1 to 2 teaspoons harissa paste, 800 ml vegetable stock, 4 tomatoes and salt, pepper, cumin, paprika powder and lemon juice for seasoning and parsley and natural yogurt for decoration.

  1. Peel the garlic and onions, cut the ingredients into fine cubes and sauté them in a pan with a little oil.
  2. Wash and cut the aubergines and put them in the pot as well. Fry the eggplant for a few minutes.
  3. Wash the lentils with water and add them to the garlic, onion, and eggplant. Now season the dish with salt, pepper, paprika powder, cumin, and harissa paste.
  4. Pour the vegetable broth over the whole thing and bring it to a boil.
  5. Then wash and dice the tomatoes and add them to the soup. Now everything has to simmer for about 20 minutes over medium heat. Stir regularly.
  6. Finally, you can puree the soup, add lemon juice to taste, and garnish it with parsley and plain yogurt.
