Vegetarian Meatball Couscous
The perfect vegetarian meatball couscous recipe with a picture and simple step-by-step instructions.
- 1 Cup Coarse couscous
- 1 Onion
- 1 Clove of garlic
- 2 Eggs
- Breadcrumbs
- Salt
- Pepper
- 200 ml Rapeseed oil
- Lettuce leaves
- Cook the couscous in salted water until the water has boiled off completely. Set aside and let cool down.
- Peel and finely chop the onion and garlic. Fry in a little oil.
- Now put the couscous in a bowl, add the fried onion and garlic. Add egg. Add depending on the breadcrumbs. So much until everything results in a slightly firmer mass. Salt and pepper.
- Form small balls. Put an EGG in a small bowl and whisk. Put breadcrumbs in another small bowl. Waste the couscous balls first in egg and then in breadcrumbs.
- Heat 5,200 ml of oil in a pan and bake the couscous balls until golden brown on both sides. Drain and serve on a plate with lettuce leaves.
