Vegetarian Meatball Couscous

The perfect vegetarian meatball couscous recipe with a picture and simple step-by-step instructions.

  • 1 Cup Coarse couscous
  • 1 Onion
  • 1 Clove of garlic
  • 2 Eggs
  • Breadcrumbs
  • Salt
  • Pepper
  • 200 ml Rapeseed oil
  • Lettuce leaves
  1. Cook the couscous in salted water until the water has boiled off completely. Set aside and let cool down.
  2. Peel and finely chop the onion and garlic. Fry in a little oil.
  3. Now put the couscous in a bowl, add the fried onion and garlic. Add egg. Add depending on the breadcrumbs. So much until everything results in a slightly firmer mass. Salt and pepper.
  4. Form small balls. Put an EGG in a small bowl and whisk. Put breadcrumbs in another small bowl. Waste the couscous balls first in egg and then in breadcrumbs.
  5. Heat 5,200 ml of oil in a pan and bake the couscous balls until golden brown on both sides. Drain and serve on a plate with lettuce leaves.
