Couscous Salad – Vegetarian – Summer Salad
The perfect couscous salad – vegetarian – summer salad recipe with a picture and simple step-by-step instructions.
- 250 g Couscous
- 1 tsp Vegetable broth powder
- 1 Pc. Yellow peppers
- 2 Pc. Tomatoes
- 2 piece Spring onion
- Pepper, salt, curry
- 4 tbsp Olive oil
- 3 tbsp Light basamic vinegar
- 2 tbsp Herbs to taste
- 0,5 Pc. Cucumber
- Put the couscous in a bowl. Add the vegetable stock. Scald with hot water (approx. 300 ml) and let it steep. Possibly add more water.
- Cut the vegetables into small pieces. There are no limits to your imagination. Everything really fits into the salad …….
- Add sliced vegetables and spices when the couscous has cooled down. Mix and season to taste.
