Vegetarian meatballs

Ingredients for 1 servings:

  • 150 g mushrooms, brown
  • 1 small onion(s)
  • 200 g white beans, from a can or jar
  • 10 stalks of parsley
  • 1 rosemary sprig(s)
  • 60 g breadcrumbs
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely chop the mushrooms, onion, garlic cloves, parsley, and rosemary sprigs. Add the beans and mash everything with a fork or potato masher. Add pepper, salt, soy sauce, and breadcrumbs and mix well. Form into walnut-sized balls (or burgers) and fry them all over in hot olive oil. Making the mixture isn’t difficult, but flipping the burgers is tricky, as they’re easily breakable. Serve with a mixed salad.
