Vegetarian onion cake with smoked tofu

Ingredients for 8 servings:

  • 250 g flour
  • 1 sachet of baking powder
  • some water
  • some salt and pepper
  • some oil
  • 1 large onion(s)
  • 100 g smoked tofu
  • 1 cup whipped cream
  • 1 egg(s)
  • 1 handful of cheese (Emmental or Gouda), grated
  • salt and pepper
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

quick, tasty and vegetarian

Mix the flour, baking powder, oil, salt, and pepper with enough water to make a dough that’s easy to knead and non-stick. Knead thoroughly and spread it out in a round baking dish. Pull the edges up. Thinly slice the onion and cover the dough with it. Dice the smoked tofu and arrange it on top. Mix the cream and egg, salt, and pepper with a fork and spread it on the onions. Finally, sprinkle the cheese on top and garnish with a few knobs of butter. Bake at 200°C (fan oven) for about 40 minutes. Serve warm with a glass of cold Federweißer (Federweißer). I prefer shortcrust pastry because it’s quicker to make. It’s also more neutral in flavor than yeast dough, allowing the flavors of the onions and tofu to come through better.
