Vegetarian pasta and broccoli casserole

Ingredients for 5 servings:

  • 500 g pasta
  • 1 broccoli
  • 200 ml milk
  • 150 g processed cheese
  • 100 ml cream
  • 170 g tofu
  • 2 eggs
  • Salt
  • pepper
  • Vegetable broth, instant
  • Paprika powder
  • 200 g mozzarella, grated
  • 2 tbsp sunflower seeds

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Clean and chop the broccoli. Cook the noodles and broccoli florets in salted water until al dente. Cut the tofu into small pieces and fry in a pan until crispy. Mix the eggs with the cream cheese, milk, cream, and seasoning. Mix the noodles, broccoli, and tofu in a casserole dish and top with the cheese. Sprinkle a handful of sunflower seeds over the casserole. Bake in a preheated oven (200°C) for about 30 minutes.
