Ingredients for 2 servings:

  • 6 m.-sized potatoes, medium-sized
  • 1 stalk(s) leek, sliced
  • 500 g mushrooms, quartered
  • 125 g feta cheese, diced
  • 1 garlic clove(s), chopped
  • 3 sprigs of thyme, fresh
  • Pepper from the mill
  • Olive oil for frying
  • Salt
  • Paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brush the potatoes and cut them into small boats, still with their skins on. Heat the oil in a pan, add the potatoes and thyme sprigs, and cook uncovered for about 15 minutes over medium heat. Add the leek, mushrooms, and garlic and cook uncovered for about 10 minutes. Season with spices. Add the feta cheese and heat briefly. This goes well with tzatziki or herb curd.
