Farmer's omelette

Ingredients for 2 servings:

  • 500 g potatoes
  • ½ bell pepper(s), red
  • ½ bell pepper(s), yellow
  • 2 tomatoes
  • 1 jar mushrooms (alternatively 200 – 300 g fresh mushrooms)
  • ½ cucumber(s)
  • 1 onion(s)
  • 2 eggs
  • salt and pepper
  • 1 tbsp parsley, chopped
  • Paprika powder
  • Vegetable broth, granulated
  • oil

Peel, wash, and coarsely grate the potatoes. Roughly dice the bell peppers and tomatoes, and finely dice the onions. Peel and roughly dice the cucumber (if not organic). Fry the onion in 1 tablespoon of oil, add the potatoes, and fry vigorously over high heat for about 10 minutes. They should be well cooked. Season with salt and pepper. Add all the vegetables and the drained mushrooms and fry everything over medium heat for another 5-10 minutes. Season to taste with the remaining spices. Whisk the eggs together, reduce the heat, and pour the eggs over the vegetables. Let them set for about 5 minutes and serve immediately, sprinkled with parsley.
