Vegetarian pulled jackfruit burger

Ingredients for 6 servings:

  • 1 can Jackfruit, young, green, drained weight approx. 280 g
  • 1 onion(s)
  • 300 ml water
  • 4 tbsp BBQ sauce
  • ½ tsp vegetable broth
  • 6 hamburger buns, small, or 4 large
  • some mustard or hamburger sauce
  • e.g. onion(s), tomatoes, cucumbers, jalapeño etc. as topping
  • 2 tbsp vegetable oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

with jackfruit as a meat substitute

Remove the jackfruit pieces from the can, drain in a colander, and then pat dry with a kitchen towel. Dice an onion and fry it in a pan with the jackfruit and oil for 3-4 minutes. Deglaze both with the water and stir in the vegetable stock and BBQ sauce. Let the sauce simmer for about 10 minutes, stirring occasionally, until it becomes creamy. Then, using two forks, shred the jackfruit pieces into typical pulled pork strands. Briefly toast the burger buns, spread with mustard or hamburger sauce, and top with the pulled pork and other ingredients as desired.
