Ingredients for 2 servings:
- 1 small pumpkin(s), approx. 500 g
- 1 m.-sized onion(s)
- 5 potatoes
- 1 pinch of curry
- 1 pinch(s) of Garam Masala spice mix
- 1 piece(s) ginger, chopped, amount according to taste
- 500 ml vegetable stock
- Raisins to taste
- Oil for frying
- 200 ml coconut milk
- chili powder
- salt and pepper
- Sugar
- Coriander or peppermint, lemon balm, sorrel
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the pumpkin if necessary, scrape out the seeds and cut into approximately 2 cm pieces, dice the onion, peel the potatoes and also cut them into approximately 2 cm cubes. Finely chop the ginger. First, lightly sauté the onion, then the pumpkin and finally the potatoes in a pot until the onion is translucent. Add the ginger, raisins and spices, roast briefly, and pour in the vegetable stock. Simmer until everything is soft or firm to the bite, according to taste. Then add the coconut milk and continue simmering until a creamy consistency is achieved. Season to taste with salt and pepper, a pinch of sugar and chili. Garnish with chopped herbs to taste when serving.
